Ingredients
- Ground beef (80/20): 1 lb, loosely packed into 4 balls.
- Yellow onion: 1 large, paper-thin slices.
- American cheese: 4 slices.
- Burger buns: 4 brioche or potato rolls.
- Salt and black pepper: To taste.
- Butter or mayo: For toasting the buns.
- Optional toppings: Pickles, mustard, garlic aioli.
Instructions
- Divide ground beef into four 4 oz balls. Do not press them into patties.
- Preheat a cast iron skillet or griddle over medium-high heat.
- Toast the buns with butter or mayo until golden and set aside.
- Place a small pile of onions on the hot skillet. Immediately press a beef ball on top using parchment and a heavy spatula. Smash hard and season with salt and pepper.
- Let the patty cook without moving it for 1.5 to 2 minutes. Flip once, add cheese, and cook for 1 more minute.
