Description

A savory twist on the classic—French Onion Meatloaf combines caramelized onions, juicy ground beef, breadcrumbs, Parmesan, and herbs for a comfort food masterpiece. It’s family-friendly, budget-conscious, and perfect for a weeknight or cozy Sunday dinner.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • ½ cup beef broth
  • pounds ground beef
  • ½ cup breadcrumbs
  • 2 eggs, beaten
  • ½ cup grated Parmesan cheese (or Gruyère for deeper flavor)
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil and cook onions over medium heat until caramelized (about 15 mins).
  3. Add garlic, Worcestershire sauce, and thyme. Stir 2 minutes. Add beef broth and simmer 2–3 minutes. Let cool.
  4. In a large bowl, mix ground beef, breadcrumbs, eggs, cheese, seasonings, and half the onion mixture. Don’t overmix.
  5. Press mixture into a loaf pan. Spread remaining onion mix on top.
  6. Bake for 1 hour or until internal temp hits 160°F. Rest 10 minutes before slicing.
  7. Serve with mashed potatoes, veggies, or on sourdough bread.

Notes

  • Use Gruyère cheese for a deeper, French-inspired flavor.
  • Let the loaf rest before cutting to keep it juicy.
  • Make ahead and freeze slices for meal prep!
