- 2 tablespoons olive oil
- 2 large yellow onions, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- ½ cup beef broth
- 1½ pounds ground beef
- ½ cup breadcrumbs
- 2 eggs, beaten
- ½ cup grated Parmesan cheese (or Gruyère for deeper flavor)
- Salt and black pepper, to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, heat olive oil and cook onions over medium heat until caramelized (about 15 mins).
- Add garlic, Worcestershire sauce, and thyme. Stir 2 minutes. Add beef broth and simmer 2–3 minutes. Let cool.
- In a large bowl, mix ground beef, breadcrumbs, eggs, cheese, seasonings, and half the onion mixture. Don’t overmix.
- Press mixture into a loaf pan. Spread remaining onion mix on top.
- Bake for 1 hour or until internal temp hits 160°F. Rest 10 minutes before slicing.
- Serve with mashed potatoes, veggies, or on sourdough bread.
